Bees Knees Chevres

Bees’ Knees Chevre—
This cheese is named in appreciation of my grandmother’s expressive language and celebratory spirit. If she were alive, I’m sure she would exclaim “It’s the bees knees!" I bought my grandmother’s house after many years of it being out of the family. Main Street Cheese is based in what was my grandmother’s barn and it exudes her strong spirit.

Poetic Pyramid

This mold-ripened, traditional French cheese is named Poetic Pyramid in honor of the goats—many of whom have been named after poets, writers, and artists—Bell after bell hooks, Terry after Terry Tempest Williams, Anne after Anne Waldman, Audre after Audre Lorde, and Tracy after Tracy Chapman, to name a few.

Peabody’s Bloom

This aged chevre is named Peabody’s Bloom—as the goats live at the old Peabody Farm, and evoking the French vitners’ notion of terroir—that wine, or in this case cheese—is unique to its place of origin---having overtones of the local soil, plants, and climate.

Browsy Tomme

 

This Alpine-style cheese is aged 2-4 months.
